My friend and blogger, Tammie Nelson of Simple. Healthy. Tasty. came over to our home for a visit the other night and brought her famous “Good n’ Healthy” cookies. They were so good, I couldn’t stop eating them. Their taste and texture is perfect!
Healthy Peanutty Cookies
Whisk together first 5 ingredients. In a separate bowl combine flour, soda, salt. Add to the peanut butter mixture and mix well. Fold in oats, carob chips, and chopped nuts. Drop on oiled cookie sheet. Bake at 350º for approximately 8 minutes. I had to triple this recipe, since one batch wouldn’t last more than five minutes in my house.
