Healthy Peanutty Cookies

My friend and blogger, Tammie Nelson of Simple. Healthy. Tasty. came over to our home for a visit the other night and brought her famous “Good n’ Healthy” cookies. Good n Healthy Cookies 300x225 Healthy Peanutty CookiesThey were so good, I couldn’t stop eating them. Their taste and texture is perfect!

Healthy Peanutty Cookies

1/3 cup peanut butter
2 Tablespoons coconut oil or palm
1 cup Sucanat
1/3 cup almond or rice milk
1 teaspoon vanilla
1 cup whole wheat flour
½ tsp. baking soda
½ tsp. sea salt
1 cup rolled oats
½ cup carob or dark chocolate chips
½ cup chopped nuts (optional)

Whisk together first 5 ingredients. In a separate bowl combine flour, soda, salt. Add to the peanut butter mixture and mix well. Fold in oats, carob chips, and chopped nuts. Drop on oiled cookie sheet. Bake at 350º  for approximately 8 minutes.     I have such a weakness for peanut butter. Sure wish I had carob chips. Maybe I’ll make them with regular choc. chips anyway.

      I made these with regular choc chips (didn’t have carob) and xylitol/honey (didn’t have sucanat). They were very good, even with the sugar cut back. Thanks!

      I’m making them again right now.

      If I had almond butter, I would have used that instead of peanut butter. I also LOVE nuts in my cookies.
