Easy Potato Frittata

Tonight I wanted an easy recipe for dinner that wouldn’t heat up the whole kitchen, something that would use up some of the many eggs we had from our chickens. I threw some ingredients together and when I finished, realized I’d made a form of potato frittata.

It only takes one skillet!

Easy Potato Frittata Recipe

  • 6 potatoes, sm/med size, dicedCut broccoli 150x150 Easy Potato Frittata
  • 1 head broccoli, small-medium
  • 1 carrot, grated
  • 4-6 eggs, organic preferably
  • 1 TB olive oil
  • grated cheese (opt)-I use raw cheese sparingly
  • 1 tsp sea salt

Dice up your potatoes small, use a cutter if you have one. We pulled out the Cuisinart and used this attachment, which worked perfectly and saved tons of time. A fry cutter would work too.

Put the potatoes and olive oil in a large skillet on medium-high heat. Cook for 3-5 minutes.

Grate the carrot on top.

Add the chopped up broccoli and stir. Cook for another 3-5 minutes. Stir.

Add your eggs. We had plenty from our chickens.

Stir and cook for another 3-5 minutes. Top with a little grated cheese.

Optional Recipe Add-ins

  • yellow or green onion, chopped
  • garlic, pressed
  • bell peppers, diced
  • zucchini, diced
  • spinach, chopped
  • corn, cut
  • peas
  • asparagus, chopped
  • ground pepper

    Pasta/Peas

    coarsely chop 2 tomatoes, thinly slice small sweet onion, 1/2 C peas (alittle more if you like more peas) can use fresh or frozen peas, 1-2 T Extra Virgin Olive Oil, salt/pepper to taste …. put everything in small saucepan, cook over low heat covered — if a little liquid is needed add some water 1/4 to 1/2 C. If using frozen peas not so much liquid is needed. Cook over low heat (covered) until tomatoes/onions are soft…then cook pasta on the side, I like elbow macaroni, top with the peas/tomatoes…enjoy !

    I like Fritattas. This one looks like one that I would like.
    When the zucchini comes in and don’t know what to do with all of it, I cook a cup of thinly sliced onion and thinly sliced zucchini in olive oil 4 to 5 min. I, then beat 6 eggs in a bowel with 4 T parm. cheese,a little s&p. then add sauteed zucchini and onions. Pour into a cast iron frying pan with 4 T of butter until it foams. Pour mix into pan add parsley and basil. Keep heat very low and cook until set about 20 min.Sprinkle with 1T of parm cheese, then put under broiler for a minute.
