When you heat the eggs, you’re talking about heating the water in a pan, and then putting the uncracked egg in the water once it gets to that heat, or beginning with the eggs in the water?
Having never heated eggs except to hard boil them, this step is a bit confusing….
I make mayo all the time, and pasteurize my eggs. You want to heat the water first, then add the eggs, and then watch the temp, because if your pan is really small or you add cold eggs the temp will dip for a bit. Add the eggs in the shell – not opened. After pasteurizing, they will still look just like any raw egg.
I go longer than 3 minutes, though. It’s supposed to take 2 minutes for the pasteurization process, and I think personally it takes more than 1 minute for the heat to fully penetrate the egg.

Thanks for your reply, Laura! Here’s what Faith says to do: put the eggs in the cold water like you are going to hard boil them.
I start with a pan with two eggs and cold water (or as cold as it gets while in Tucson during the summer). I heat the pan and stick a thermometer to watch the temperature rise. Try not to let the temperature go above 142 degrees F. After 3 mins at or around 140 degrees F, rinse with cool water/ice and then refrigerate until you are ready to use.

To get the right consistency, I believe. It would be nice to know if there is a difference in the methods in the final product.
